Crowd Pleaser Hot Wings

You can never go wrong with Hot Wings! These wings are a medium spice level and are super easy to make! We love these wings for game night, movie night or any reason!! Serve them with your favorite veggies and dips like Ranch or Blue Cheese.

🍗 Ingredients 🍗

Buffalo Sauce

  • 1/4 tsp cayenne pepper
  • 1/8 tsp garlic powder
  • 1/2 tsp brown sugar
  • 1/2 tsp Worcestershire sauce
  • 1½ tbs white vinegar
  • 2/3 cup Louisiana Hot Sauce
  • 1/2 cup butter
Light Breading
Chicken
  • 32 chicken wings
  • 1/2 tsp Lawry's Seasoning Salt
  • Flavorless, high smoke point oil for deep frying: Peanut Oil or Safflower Oil

Method

  • In a large heavy pot, add your frying oil. I'm using a large 5.5 QT dutch oven and filled about 1/3 of the pot. Preheat to 350°F
Prep the Chicken
  • In a large bowl, add your chicken wings and Lawry's Seasoning Salt (or any brand of your choosing). Mix well and set aside. Do not marinade for more than 30 minutes. You don't want the chicken to start releasing its liquid.
Prep the Sauce
  • In a small pot, add the ingredients to make the sauce. Bring to a low simmer and stir. Once the butter is melted and the spices are dissolved, turn off the heat and set it aside.
Time to Fry

  • In a disposable bag or large bowl,  add the corn starch and rice flour. Mix. Add 1/2 of the chicken (16 pcs) and shake well to thoroughly coat the chicken.
  • Add the wing to the oil. BE SURE TO THOROUGHLY SHAKE OFF the excess flour from each wing before adding it to the oil. Do not over crowd the wings or they will remain soggy.
  • Fry the wings for 10 minutes. Remove them and set them in a strainer. 
  • Repeat the process for the remaining wings.
Time for the 2nd Fry
  • Increase the oil temp to 375°F and preheat. Once at temp, add all the wings back in. If your pot is large enough, you can add all the wings back in at once. Be careful to avoid boil over! GENTLY mix to ensure all the wings are coated by the oil. Fry for 5 mins. 
  • Remove the wings and place in a strainer.
Place the wings in a large mixing bowl. Pour the sauce over them and toss. These wings are now ready to serve!
