Creamy Beer Cheese Dip

Bring this pub favorite into your home! This Beer Cheese Dip is luscious and creamy. What makes it so creamy you ask? The addition of mozzarella cheese!!! When you think about how mozzarella pulls apart on pizza, you drool at the thought of that long stringy cheese going on for miles. So why not add it to your beer cheese dip? It's creamy, it melts well, and the mild flavor will not over power the cheddar and beer. 

This dip is the perfect vessel for pretzels, pigs in a blanket, and hearty bread. There are many ways you can get creative with this dip!

Ingredients
  • 1/4 cup butter (1/2 stick)
  • 1/2 cup all purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1¼ cup whole milk
  • 3/4 cup beer (I prefer IPAs or any beer that is light in color)
  • 2 tsp ground or spicy mustard
  • 1/2 cup fresh mozzarella 
  • 1½ cup sharp cheddar
Method
  • In a medium sauce pot, bring the butter to a simmer. Add the flour and stir, cooking the flour for about 1 minute. 
  • Add the beer and low simmer until it starts to thicken. Slowly drizzle in the milk and stir at the same time. 
  • Add the mustard, garlic powder, onion powder and cayenne. Stir until the mixture has re-thickened and is hot. 
  • Add all the cheese and keep stirring until melted. Turn off the heat and serve warm !!
