Mango Sticky Rice

Let's break all the rules and simplify how this delicious treat is made! This Mango Sticky Rice is quick & super easy. Who has time for a steamer basket? Or who wants to buy a cone shaped steamer basket and cheese cloth! Don't we have too much already? :)

Rice

1/2 cup HOT water
1/3 cup Sugar
Sauce
3/4 cup Coconut Milk
1 tbs Sugar
1/2 tsp Corn Starch

Method

  • Rinse the rice in cold water and drain until you end up with clear water. Add cold water and soak the rice in the refrigerator for a minimum of 6 hours....overnight is best.
  • The next day, drain the rice and set it aside.
  • In a separate mixing bowl add the HOT water and sugar. Stir the sugar until it dissolves.
    • Add 1 cup of coconut milk and 1/2 cup of water and stir
  • Put the rice into your rice cooker. Add the coconut sauce and mix.
  • Cook according to your machine's standard time for rice
  • In the meantime, make the sauce.
    • In a small sauce pot, mix all the sauce ingredients.
    • Bring to a strong simmer, mix often. Once thickened, turn off the heat and set aside.
    • It will continue to thicken as it cools
  • Once the rice is done cooking, fluff it and serve! Top with mangoes, sauce, and toasted sesame seeds. Serve slightly warm. Enjoy!
