This Thai dipping sauce is super easy to make and delicious. It balances sweet and spicy and is great with egg rolls, spring rolls, fried calamari and fried shrimp! Make it ahead of time and store it in the refrigerator. It is best served at room temperature.

Ingredients
- Water - 1 cup
- Garlic Chile Paste - 1½ tsp https://amzn.to/2FX9sCU
- Sugar - 1/3 cup
- White Vinegar - 1/3 cup
- Salt - 1/4 tsp
- Cornstarch Slurry - 1 tbs cornstarch + 2 tbs water
- In a small sauté pan, bring water and garlic chile paste to a simmer
- Add sugar and stir to dissolve completely
- Add vinegar and salt. Simmer 3 minutes
- Add cornstarch slurry and stir constantly until thickened. Should be a maple syrup consistency
- Let cool completely and serve!!
