Super Easy S'mores Brownies

There is nothing wrong with semi-homemade when it comes to these decadent S'mores Brownies. Many of you are dealing with the new norm of being full time employees, full time parents, full time teachers in practice, and now home chefs! Sometimes we need to scratch baking from scratch so we can still enjoy a delicious treat without sacrificing time. 

Your family will love this recipe. The graham cracker topping is crispy, the chocolate is gooey, and the brownie is delicious indulgence at its finest.

Yields:            16 pcs

Ingredients
  • Whole Graham Cracker sleeves - 5 ½ to line the pan ( 9 x 9 baking pan)
  • Graham Cracker pieces - Amount to your liking
  • Brownie Mix
  • Dark Chocolate Chips - 1 cup (or chopped Hershey's bar)
  • Mini Marshmallows - 1 ½ cups

Method

  • Lightly spray your pan and line with parchment paper. Add a layer of graham cracker sleeves.
               

  • Use your favorite brownie mix and prep according to the package instructions. Pour over the graham crackers and gently spread evenly without disturbing the crackers. Bake in a preheated oven according to the package instructions.

      

  • Remove the cooked brownies from the oven. Scatter the chocolate chips and marshmallows. Then on top, scatter more chips and the graham cracker pieces. Putting the graham cracker pieces on top will give the you that authentic, S'mores crunch.
  • Put the pan back in the oven on the broiler setting. DO NOT WALK AWAY. Watch the marshmallows. Once they brown, remove from the oven immediately. Let it cool in the pan for 30 mins. Then use the parchment paper to lift it out of the pan and let it finish cooling.

      

  • Once it's completely cooled, you will be able to cut nice cubes. I pre cut them and place in a covered dish for everyone to grab as they please. You can keep this in a sealed container for up to 4-5 days on the counter. After the first day, we like to heat up a slice in the microwave for 12 seconds. YUM!! (Be careful, it can get scalding hot in the microwave.) 
          I used a toothpick to scatter my melted chips. This isn't necessary but I like the rustic look of the 
          melted chocolate instead of the melted chips staying in tact.
