When you're in a pinch, this is a great alternative to homemade Jerk seasoning. We have tried several brands of Jerk seasoning and this one takes first place. Since we discovered this brand, we have yet to go back to the homemade version. Of course there are many wonderful homemade versions but for this recipe, we are looking for quick and tasty. This fresh mango salsa help offset the spice and adds a nice balance of sweet & spicy.

Prep Time: 15 mins (10 Mango Salsa + 5 Chicken)
Cook Time: Approximately 35 mins
Grill Temp: 400°
Ingredients:
For the Chicken - Rub the seasoning all over the chicken. Set aside
- Chicken Breasts - 4 med/lg boneless, skinless
- Hot & Spicy Jerk Seasoning Paste - 4 tbs (1 per breast). This is very spicy. https://amzn.to/3h2rnG3
- Choose Mild or use both Hot & Mild and mix to your liking.
- Mangos - 2 large, ripened. Diced
- Onion - 1/4 of small onion. Diced
- Campari Tomatoes - 3. Diced (Or any sweet tomatoes. We prefer Campari because the flavor is consistent and is sweet)
- Cilantro - 1/8 to 1/4 cup. Chopped
- Salt - to taste (I use 1/2 tsp)
Method
- Mix the mango salsa, cover and set in the refrigerator to let the flavors marry before you start the chicken. This is a fresh salsa and is best when made fresh.
- Use 1 tbs of paste for each chicken breast. Rub and coat the breast thoroughly and set aside. Start heating up your outdoor grill.

- Cook the chicken on the grill. The internal temperature should be 165° when done. Remove from the grill and serve with the mango salsa. We like to add a side of plain white rice. This helps tame some of the spice. And that's all folks!! Enjoy!
- You can cook your chicken on a stovetop grill but we like the smoky flavor from an outdoor grill. I don't recommend baking in the oven because this creates steam under the breast.
- Use gloves when rubbing the raw chicken with the jerk seasoning. Getting the seasoning out of your nails is an ordeal and the spice burns a little. Don't touch your or your dog's eyes!
- Start with a little salt for your salsa. The Jerk Seasoning is salty so less in the salsa is better.
- Storing the salsa: If you have any left, it will keep in the refrigerator for a day MAX. I don't recommend having leftovers :) Finish it...ha!
