Easy Chicken & Cheese Casserole

This casserole is a classic! The chicken is tender, the sauce is creamy, and the pasta soaks up all the luscious sauce marrying all the flavors together. This Chicken & Cheese Casserole easily makes 8-10 servings making it ideal for a large family. And, it is super easy to make and customize! We like to add a few dashes of hot sauce when serving, to add a little zing. 

You can make the chicken from scratch, buy a rotisserie chicken, or use leftover chicken. I prefer to use leftover chicken or rotisserie. Who wants to add more steps and time by cooking chicken from scratch?! This dish is supposed to be easy breezy.

Ingredients - The ingredients are groups to simplify the cooking process.

Protein
  • Cooked Chicken - 1½ lbs, cubed (I use Rotisserie Chicken from my local grocery store)
Pasta
  • Egg Noodles - 16 oz package. Cooked according to package instructions and drained.
Sauce
  • Butter - 4 tbs (1/2 stick)
  • Onion - 1/4 small onion, diced
  • Garlic - 3/4 tbs, minced (or 1½ tbs garlic paste)
  • AP Flour - 1/4 cup
  • Chicken Broth or Stock - 2 cups, unsalted
  • Whole or 2% Milk - 2 cups
  • Salt - 1/2 tsp
  • Pepper - 1/2 tsp
  • Sharp Cheddar Cheese - 2 cups, shredded
  • Frozen Peas - 13 oz package, thawed and drained 
Crumble Topping
  • Ritz Crackers - 1 whole sleeve, crushed (or use 1 cup of Panko bread crumbs)
  • Olive Oil - 1 tbs
  • Parmesan Cheese - 1/3 cup
Method
  • Cook the Egg Noodles according to the package instructions, but shorten the cooking time by 3 minutes. Remove the noodles, drain, and set aside in a large mixing bowl.
  • In a large sauté pan, melt the butter and bring to a simmer. Add the onions and cook until translucent. Add in the garlic and flour. Cook the flour for 1-2 minutes
  • Pour in the chicken broth and stir. Add the milk, salt & pepper. Bring to a light simmer until thickened. 
  • Turn off the heat. Add the cheese and stir to melt. Add the peas and chicken and stir. Pour the sauce over the pasta and stir. Pour the mixture into a greased 9 x 13 pan.
  • Mix he crumble topping ingredients. Sprinkle all over the casserole.
  • Bake in a preheated 400°F oven, uncovered, for 20 mins until the topping is browned. 
  • Let cool for 15 mins before serving. ENJOY!!!
