Avocado Salsa in 3 Steps! (Salsa de Aguacate)

Avocado salsa is the cherry on top of summer freshness! This salsa is creamy with a hint of spicy goodness. I introduced this to my husband over a plate of homemade rolled tacos and he devoured it! Add a side of fresh tomato Mexican rice to help scoop up all that leftover green goodness off your plate. Then, lick the plate anyway!

Ingredients - The ingredients are grouped to make the cooking process easier. Links are provided for quick access to purchase tools or pantry items.

Wet - Simmer, strain and reserve 3/4 cups of the simmering liquid. Set all aside to cool completely
  • Tomatillos - 6 med / large
  • Garlic - 2 cloves
  • Onion - 1/4 large
  • Serrano Peppers - 2
  • Jalapeno Peppers - 2 
Remaining ingredients - Prep and set aside
  • Avocado - 1, peeled and deseeded
  • Salt - 1/2 - 3/4 tsp
  • Cilantro - 6 whole stems
Cooking Instructions

Step 1: Add the wet ingredients to a sauté pot. Cover and bring to a simmer for 15 mins. When the vegetables are done, they should turn into an olive green color. 

Strain and reserve 3/4 cups of the liquid. Set everything aside to cool completely.


Step 2: Add the cooled vegetables, broth, and salt to a blender. Cover and puree.


Step 3: Add the avocado and cilantro to the mix. Puree again until barely creamy. Do not over puree. You don't want to oxidize the avocado too much. It should be thick enough to coat the back of a spoon.

 

All done!! You can serve this with chips along with other salsas or queso. Or how about a Taco Bar with multiple sauces?! But my personal favorite is over rolled tacos. You can make your own rolled tacos or buy them. The rolled tacos I used here are store bought. Plain beef or chicken is ideal. I hope you try this one!


Tips 
  • Do Step 1 ahead of time and store in the refrigerator. I simmer the day before and put in the refrigerator over night.
  • Add sour cream drizzle to add a cooling effect if this salsa is too spicy for you. To make drizzling easier, put your sour cream in to a small bowl and whisk. It will become drizzle"able"
