Aguas Frescas Series: Pineapple (Piña)

Ripened pineapples?!!  Agua de Piña is stinkin good and refreshing. I can't get enough of it so I always take advantage of a good pineapple produce season. This gorgeous, golden, yellow drink just sings pineapple 🎶🎵. 

Growing up in Texas, several Mexican Restaurants have Agua de Piña. Unfortunately, I have yet to find this delight anywhere in Georgia so I decided to make it and exactly the way I like it. The traditional version of Agua de Piña is intended to be a mild flavor hence, the name "Pineapple Water". But I prefer a slightly stronger pineapple flavor that is a balance between water and juice. You can also shake it up with some plain or Coconut Rum!! 

This recipe is dedicated to the islands of Hawaii where I spent several summers as a child.

Prep Time:    15 minutes
Yields 5 cups

Ingredients
  • Ripened, Fresh Pineapple - 2 ¼ lbs, cored and cubed (Weight after peeled).
  • Water - 2 ¼ cups + 1 cup
  • Sugar - ¼ cup
Method
Step 1 - Add the pineapple, 2 ¼ cups water, and sugar to a blender. Puree well. Pour the puree into a bowl over a fine strainer. Use a spoon to help push the liquid through. (I did not use the pineapple core)

          

Step 2 - Keep the pulp. Add it back into the blender with 1 cup of water. Blend again and strain again. The pulp remaining after the 2nd strain should be significantly less. This can be discarded.
                   
Step 3 - Skim the foam from the juice. I like to put the foam into a gravy strainer so I can get every drop of this beautiful liquid. You don't have to do this but it's worth it to me :)

All done!! You should be left with this beautiful, golden yellow drink. Serve it over ice. Enjoy this one friends!! 


Tips and 411
  • If you don't mind a thicker juice, you don't have to strain the liquid. You will end up with a heartier beverage. It will look cloudy. You will need to stir often because the sentiments will sink to the bottom.
  • This will stay fresh in the refrigerator for 2 days. The liquid may separate but just stir it before serving. After 2 days, it is still delicious and safe to drink but you will notice the flavor starting to change. This drink is so delicious; you shouldn't have any left to reserve anyway! 
  • Add some fresh lime zest or julienned mint leaves to each glass before serving. I prefer the mint. The flavor combo is stupefying 🙃
  • I purchased a whole pineapple that was already peeled and cored. If you have an amazing blender, like a Vitamix, you can use the core if you plan on using the straining method.
