3 Ingredient Queso - Mexican Restaurant Style Cheese Dip

When I share this recipe with friends, they are always shocked at how simple it is. I have heard time and time and again, "I wish I could make cheese dip like the Mexican restaurants." I was recently at the grocery store and at the deli, I was ordering the cheese needed to make this amazing Queso for Chicken Nacho night with my husband. When I asked the lady at the counter to just give me a block opposed to slices, she asked what I was making. 

Fast forward; the deli lady now has my recipe and will be making this dip. She too was surprised at how easy it is and said her family has been craving cheese dip since their favorite Mexican restaurant closed. She was using that yellow cheese brand. You know that one that will survive beyond the Zombie Apocalypse? Ya'll please don't do that. Trust me. Been there. Done that. Converted forever!

Ingredients
  • White American Cheese - 0.75 lbs (shredded or diced)
  • Whole Milk - 1/4 to 1/2 cup
  • Roasted Green Chile - 4 oz can, not drained
Method
  • Start with 1/4 cup of milk. Add it to a small sauté pan and bring to a low simmer.
  • Add in the cheese and green chile.
  • Stir on a low simmer until the cheese is melted. It will look a little runny. Once you turn off the heat, it will start to thicken. Add more milk if you prefer. But wait until it thickens so you know where you are starting. You can always add, but you can't remove :)

  • Turn off the heat and serve immediately. As it cools, it will develop a film. Just stir to reincorporate the film into the cheese :) ENJOY! 
Tips
  • Do not boil or rush the melting process. This will result in your dip separating or the milk curdling. 
  • Shred the cheese for expeditious melting.
  • Do not buy pre-packed shredded cheese from one of those chain brand names. Pre-shredded cheese is purposely dried and coated to prevent sticking in the bag. You want your cheese creamy and sticky to produce a luscious, beautiful dip. We get ours from the deli counter.
  • Do not drain the green chile. Use the whole can. We like the Hot flavor. It isn't that spicy once you add all the cheese and milk.
