Fresh Tomato Mexican Rice

When you taste Mexican rice that is made from fresh tomatoes, you will never have it another way again. Especially when it is so simple to make and packed full of fresh, clean flavor. Say adios to canned tomatoes; here comes the Roma army. I tried several recipes and finally found one that, with a few minor adjustments, comes out perfect EVERY TIME. And, the leftovers reheat well! Prep Time:    5 minutes (Prep all ingredients before you start cooking)
Cook Time:    20 minutes

Dry

Sauce - Puree and set aside

  • Roma tomatos - 2 medium
  • Garlic - 1 clove
  • Onion - 1/4 small

Wet 

  • Chicken Stock / Broth - 2 cups
  • Vegetable Oil - 2 tbs
Aromatics

  • Serrano Pepper - 1 slit down the middle (or Jalapeño)
Cooking Instructions

  • Using a small food processor or hand-held emersion blender, puree the sauce and set it aside. Because the quantity is so small, a regular blender or food processor doesn't do well. Links for great tools are provided under "Tips"
  • Heat large sauté pan with vegetable oil on medium heat. Pour in rice and coat well with oil. Stir frequently to start toasting the rice. 
  • Once the rice starts browning, it can burn fast so keep stirring. Once golden brown (color of light brown sugar), pour in the sauce and stir / simmer for 1 minute. 
  • Pour in the chicken broth and mix well. 
  • Place the Serrano pepper in the middle of the rice. Cover with a lid. Turn heat to low simmer.
  • Cook for 20 minutes. To check for doneness
    • Remove the lid and fluff one small section with a fork. If the rice is dry, it is done.
    • If there is still moisture, leave the lid off and allow to simmer for a few more minutes. Check frequently, it should not take long. 
  • Once done, fluff with a fork and serve warm. 

Tips:
  •  A mini Food Processor works great! It is ideal for recipes that use smaller quantities of ingredients. It is also easy to clean :) I use my mini more than my large Food Processor. I use it to make sauces, grind oats, chop nuts...etc, Just about anything.

  • Use a long grain rice. Jasmine is ideal because it is fragrant. Don't wash the rice. It will become too difficult to toast.
